Hamburguesas de otoño / Autumn Hamburgers

Ayer en el mercado era el festin de los champiñones, nunca había visto tantos!! tengo que admitir que me senti un poco abrumada por tanta elección, no sabia que comprar! Cuando veo hongos enseguida pienso al novio de mi hermana mayor, él cultiva una especie particular que no recuerdo muy bien su nombre... pero bueno es solo un detallecito.... 


Desgraciadamente todavía no lo conozco,  si hablamos algunas veces por skype pero ya saben... no es lo mismo. De todos modos esta situación se resolverá en Navidad que seguramente lo conoceré y quizás les cuente mas novedades... veremos... Este post es para él, porque los champiñones me hacen pensar en él y aun mas estos mismos, los chanterelles. Cada vez que hablamos me los menciona asique cuando los vi, ni lo dude, los compre enseguida. También compre unos que se llaman ¨pie azul¨ alguien sabe como cocinarlos? 


Como es americano lo primero que se me vino a la mente fue hacer hamburguesas!!! hamburguesas de pollo caseras, pancito con hierbas casero, cebollas caramelizadas y el toque magico, los chanterelles! En general cierro los ojos y trato de imaginarme como queda una combinacion de ingredientes determinada, esta parecia ser muy rica pero despues del primer bocado me senti en el paraiso! Ni siquiera me acerque con la imaginacion a cuan exquisita es esta hamburguesa en la vida real... y no exagero...

Yesterday the market was a real champignon feast, I never knew there were so many!! I was quite overwhelmed by so much choice... When I see champignons I think of my sister's boyfriend, he grows them although I don't really remember which one specifically... Unfortunately I haven't met him yet, well I talked to him by skype but... you know. I hope and think that this will be soon solved, at least I will hopefully meet him on Christmas time and then I will tell you more...

This post is for him, because champignons make me think of him and specially this ones, chanterelles, since he talked to me about these several times. I saw them there and so that was my first choice, I also bought ones called ¨blue foot¨, somebody knows how to cook them? 

Since he is American... I thought of doing hamburgers!!! home-made chicken burgers, with home-made herbs bread, caramelized onions and the magic touch, chanterelles!!! I usually close my eyes and think of how a combination of ingredients would taste like and this one seemed to be ok, but after the first bite I was in heaven. I didn't even get close with my imagination to how wonderful this hamburger is in the real life...

Pan de hierbas
Esta receta la vi en una de las recetas que dan en el supermercado Coop. Me enamore enseguida y A. no veia la hora de que lo haga... hoy esta contento!

Disolver la levadura en 1/2 taza de agua tibia con una cucharadita de azucar y cubrir. Mezclar la harina con la sal. Cuando la levadura haya hecho espuma (despues de 5 minutos mas o menos) versarla sobre la harina y amasar. Agregar 1/2 taza de agua (siempre tibia) y seguir amasando. Amasar por 10 minutos y si la masa esta dura agregar un poco de agua o hasta un poco de aceite de oliva si quieren. Cubrir con un paño humedo a temperatura ambiente y dejar levar por 1 hora. Picar las hierbas y cortar el queso en dados pequeños. Pasado este tiempo incluir las hierbas y el queso y amasar 5 minutos mas hasta que quede bien incorporado. Formar 4 panes redondos y poner en una placa de horno sobre papel manteca. Hacer un pequeño corte en la superficie de cada pan y dejar levar 30 minutos mas, pintar con un huevo y hornear 20 minutos a 200 °C.


Hamburguesas de pollo
Esta receta la adapte de un blog que se llama Vitonica, hay muchas recetas sanas y lo relacionan todo con el deporte y el contenido de nutrientes en las comidas. Interesante!

Cortar las pechugas en pedacitos y pasar en la procesadora. Picar la cebolla y el ajo bien chiquitos y agregar al pollo procesado. Agregar el perejil, el huevo, la miga de pan y mezclar bien hasta que quede una especie de masa homogénea. Formar 4 hamburguesas y pasarlas por pan rallado. Reservar en la heladera.


Cebollas caramelizadas
Cortar las cebollas en juliana y saltearlas en manteca hasta que esten transparentes. Agregar el azucar (mas o menos 50 gr, pero es bastante a gusto), cocinar unos cinco minutos, bajar el fuego y cocinar 15 minutos mas revolviendo de vez en cuando. Las cebollas se van a poner cada vez mas marrones. Cuanto mas a fuego lento lo cocinemos, mas sabor van a tomar las cebollas. Cuando las cebollas esten bien marroncitas y pegadas (entre ellas no a la sarten... es por el azucar que se pegan) agregar el vino. Dejar evaporar el alcohol por 5 a 10 minutos mas revolviendo de vez en cuando y listo!

Chanterelles
Lavar los chanterelles. No dejarlos muchos tiempo bajo el agua porque si no pierden sabor. Limpiarlas con un trapo humedo o bajo la canilla pero muy poco tiempo. Cortar por la mitad los que son muy grandes. En una sarten bastante amplia, derretir la manteca y disponer los hongos en un solo plano, que no se superpongan, salpimentar a gusto. Van a liberar agua es normal, removerlos de vez en cuando. Cuando no halla mas agua quiere decir que estan listos!

Ensamblado
Cortar el pancito recien salido del horno, ponen la hamburguesa de pollo, las cebollas caramelizadas y los hongos por arriba. Si quieren agreguen unos tomatitos cherry para darle frescura y no pierdan ni un minuto en comersela toda!!!
Un consejo, antes de llenarla de mayonesa y ketchup pruebenla asi. Tiene tanto sabor y se combinan tan bien entre ellos que para mi no hacen falta aderezos pero eso es a gusto!

Herbs bread
I adapted this recipe from the supermarket Coop. Ever since A. keeps telling me when will I make this bread, he will be happy tonight!

Disolve the yeast in half a glass of warm water, add a small spoon of sugar and cover for around five minutes or until you start to see foam on the surface.
Mix the flour with the salt and pour the yeast. Knead for 5 minutes and add 1/2 a glass of water more (warm water always). Knead for 10 minutes or until smooth. If it is too hard you can still add some water (little by little) or even some olive oil. Cover with a dump rag and leave it rise for 1 hour at room temperature or in a warm (NOT HOT) place. Mince the herbs and cut the cheese in squares. Add the herbs to the bread and knead again for around 5 minutes or until everything is well incorporated to the dough. Form 4 round breads and put them on an oven tray folded with oven paper. Make a small cut on the surface of each bread and leave them to rise for 30 minutes more, paint the breads with an egg and bake for 20 minutes at 200°C.

Chicken burgers
 I adapted this recipe from a blog called Vitonica, there are plenty of healthy recipes and everything related to sport and nutrition. Very interesting.

Cut the chicken breast in tiny pieces and process them. Mince the onion and the garlic clove and add it to the chicken. Add the parsley very finely chopped, the crumbs and the egg. Add salt and pepper to taste. Blend everything together until formation of a kind of dough. Form 4 burgers and cover each one with breadcrumbs. Keep them in the refrigerator.

Caramelized onions
Cut the onions in julienne and sauté them in butter until transparent, around 5 to 10 minutes. Add the sugar (I put 50 gr but you can put more if you want) and cook for 5 minutes more. Decrease the heat to minimum and let it for 15 to 20 minutes, stirring form time to time. The more slowly you cook them the better they will taste because they will incorporate all the sugar. You will see that they become brown color. When you see that they start to stitch together (between them not with the skillet...) add the wine and cook for 5 more minutes or until the alcohol is evaporated.

Chanterelles
Clean the mushrooms. Do not leave them a long time on water, clean them with a dump rag or with tap water but briefly, otherwise they will loose their taste. Cut in two the big chanterelles. In a wide skillet melt the butter and arrange the mushrooms in a flat position, they don't have to be one over the other. They will release water, it is normal. Add salt and pepper to taste and stir from time to time. When there is no more water, chanterelles are ready!

Constructing the hamburger
Cut the bread just coming out form the oven. Put the chicken, the caramelized onions and, over them the chanterelles. If you want a fresh touch cut some cherry tomatoes over the chanterelles and don't waste even one more minute to eat this fantastic burger!
Piece of advice... before adding ketchup and mayonnaise try it without. The subtile taste of each ingredient and the combination of flavors is so perfect that to my mind you don't need to add more things, but of course this is personal!

  3. Que rico el sandwich, me encantó y los pancitos con hierbas me los anoto enseguida.
    Soy media mañosa con los hongos, al muchas variedades que no las como porque me produce azar en los dientes, no sé si entiendes la definición, pero estos que muestras no los he probado, creo que aquí se llaman diferente, pero no lo recuerdo.

  6. Nieves, me ha encantado este post. Adoro las setas, y estas en concreto, me encantan. Ahora que estamos en temporada, las compro muy a menudo. Qué hamburguesas más increíbles, toda una exquisitez, sí señora!
